1 package of Al Johnson’s Swedish Pancake Mix
2 eggs
1/2 cup of melted butter
1 cup of buttermilk
1 cup of milk
3-1/2 t baking powder
1 T vanilla
Heat a large skillet or griddle to medium high heat.
Mix dry ingredients, then add all other ingredients.
Mix well until batter has a smooth consistency.
Spray pan with food spray and wipe it out with a paper towel.
For a larger pancake, use a 1/4 cup measure to pour onto the griddle.
Wait for batter to cook with bubbles forming in wet portion.
Flip pancakes and cook for another 30 seconds.
Serve and enjoy with Al Johnson’s Syrup.
