Ingredients

1 gallon of water

2 lbs of your favorite dried fruit blend

3 cinnamon sticks

3/4 of large lemon sliced

1/2 half of orange sliced

1/4 cup of potato starch

1/2 cup of cold water

Directions

Heat 1 gallon of water in a large pot, and when boiling add dried fruit, cinnamon sticks, sliced orange and lemon and boil until dried fruit has softened about 15 minutes.

Pull pot off heat and let cool for 10 minutes.

While the pot is cooling combine potato flour and cold water stirring until mixed.

Slowly add the potato starch mixture while stirring the pot to thicken the fruit soup.

You can serve warm over ice cream or traditionally as a cold summer soup. Also makes a great cocktail with bourbon or rum over ice with soda water or as a hot toddy warmed enough without burning off the alcohol.
